SLOW ROASTED CHERRY TOMATOES: Essential Edge

Ingredients:

16 ounces ripe cherry tomatoes

1½ tablespoons extra virgin olive oil

½ teaspoon fine sea salt

1 clove garlic, finely grated with a microplane or grater

Leaves from 4-5 branches of fresh thyme

¼ teaspoon ground coriander

2 drops Coriander Vitality™ essential oil

2 drops Thyme Vitality™ essential oil

Instructions:

Serves 2-4

Preheat oven to 275°F.

• Halve the tomatoes and place in a large bowl. Add oil, salt, garlic, thyme leaves, ground coriander, and Vitality oils; gently toss until well coated.

• Place tomatoes in one layer cut side up on a parchment-lined half baking sheet or large gratin/casserole dish.

• Place in oven and bake for 2-2 ½ hours, until the tomatoes are collapsed and shriveled around the edges.

• Use immediately tossed with pasta, in salads, on sandwiches, or served with cheese; or clean and sterilize a small storage jar and pack in roasted tomatoes, cover with olive oil, seal, and refrigerate until needed.
